What you will need...
- 12oz. Blueberry Skyr
- ¼ cup honey
- 2 cups blueberries
For coating:
- 0.25lb. white chocolate
- 2 tbsp coconut oil
- Combine all ice cream ingredients in a food blender and blend until well combined. Taste and adjust the sweetness.
- Divide the Skyr mixture evenly among popsicle molds. Insert a wooden skewer.
- Freeze for 4 hours or overnight.
- To coat the popsicles; melt white chocolate with coconut oil over a double boiler. Pour the chocolate into a tall glass, that is wide enough for the popsicles.
- Dip the popsicles into the chocolate and gently shake the excess.
- Place the popsicles onto a wire rack and freeze for 30 minutes.
- Serve and enjoy.
NOTE: You can use other Skyr, such as vanilla and strawberry, and other fruits.
