Skyr Popsicles

What you will need...
  • 12oz. Blueberry Skyr
  • ¼ cup honey
  • 2 cups blueberries

For coating:

  • 0.25lb. white chocolate
  • 2 tbsp coconut oil
  1. Combine all ice cream ingredients in a food blender and blend until well combined. Taste and adjust the sweetness.
  2. Divide the Skyr mixture evenly among popsicle molds. Insert a wooden skewer.
  3. Freeze for 4 hours or overnight.
  4. To coat the popsicles; melt white chocolate with coconut oil over a double boiler. Pour the chocolate into a tall glass, that is wide enough for the popsicles.
  5. Dip the popsicles into the chocolate and gently shake the excess.
  6. Place the popsicles onto a wire rack and freeze for 30 minutes.
  7. Serve and enjoy.

NOTE: You can use other Skyr, such as vanilla and strawberry, and other fruits.
